How Ultrarunner Zach Bitter Thrives on a Low-Carb Diet

In December 2015, Zach Bitter ran exactly 402.5 laps around the track at the Desert Solstice Invitational. At the end of the 100 miles, he had not only bested the previous American record by six-and-a-half minutes, but also maintained an astounding seven-minute mile rate for almost the entirety of the 11 hours, 40 minutes, and 55 seconds.

What is even more surprising, however, is that Bitter trains and competes on almost no carbs. At times, carbohydrates account for as little as 5% of his diet–and Bitter insists that even we non-endurance record-holders can do exactly the same.
